An important client of Distribuzione Moderna requested an Italian cooked ham with a certified production chain, produced in the south of Italy for the deli counter.
STUDY
Research and selection of farmers able to guarantee the genetics of pigs born, raised and slaughtered in Italy with suitable characteristics to produce a high quality, 100% Italian cooked ham, unformed and hand-tied.
SOLUTION
A production chain was established in Basilicata, Kiwi-certified for slaughter, with the producer of cooked hams and the distribution company for deli counter. The same product was also developed in a takeaway version.
NEED
A mass retail group requested the development of an antibiotic-free pork production chain, i.e. from animals that have never been treated with antibiotics.
STUDY
Meticulous research was carried out into suitable producers who could meet the required criteria.
SOLUTION
The flow of orders for fresh cuts of meat was agreed with the slaughterhouse. The fresh hams are delivered directly to the ham producers identified jointly by the supply chain and Unitrading.

The client’s requirement was to market a Lasagna Bolognese weighing 400 grammes, with the following characteristics: 100% vegan, protein content exceeding 20%, creamy texture and the same flavour and aroma profile as the conventional product.
STUDY
Research was carried out into potential partners, and the selection was based on the following: certification, sustainability, ethics, quality and type of raw materials used to obtain an extremely high-quality product which could fully meet the client’s criteria.
SOLUTION
Once the ideal partner was identified, three different versions were produced, varying in texture, seasoning, percentage of pasta and type of sauce. Samples were sent to the client, who carried out in-house testing in order to select the product that met the criteria.
